White Truffle: Tuber magnatum Pico also known as Alba white truffle, is by far the most requested and cherished truffle due to its delicacy, but also for its unique and incredible scent and taste. Very difficult to find, we carefully select it amongst our harvester who seek for it mainly in Tuscany, Piedmont and Emilia Romagna. White truffles can be found with different shapes/dimensions: the most appreciated one is certainly the smooth and rounded one but frequently, if found in harder terrain, its shape can be very irregular. Its outer part, called peridium, can be yellow to greenish and sometimes even pale ochre depending on maturity grade, harvest period and the plant where it is found below. Its internal flesh, called gleba, is yellowish tending to hazel with unmistakable white veins rarely tending to faint reddish.
