Burgundy Truffle: Tuber uncinatum Chatin also known as the autumnal variant of the Tuber aestivum or Scorzone (“bark”) truffle which is harvested during the summer. Burgundy truffle differs from Scorzone for its more intense perfume and taste but also for its darker color. Burgundy truffle is also harvested in higher grounds than those where Tuber aestivum is normally found. Burgundy truffle is mostly found in the Tuscan-Emilian Apennines and at an altitude of 800-1200 meters above sea level. The shape of this species of truffle is normally the most regular and round one amongst all the others but there may be irregular and jagged exemplars as well. Peridium is covered with black warts differing from the Scorzone ones for being smaller and uniform. Gleba is hazelnut in color, varying to a darker brown in the oldest exemplars, with thin ponged white veins.

Harvest time: from October to December : Sizes vary from 5g to 15g;
